
Why Shortwave Halogen is a Win for Commercial Kitchens
Let’s be honest: waiting for an oven to preheat is a total drag. It wastes time, burns energy, and slows down your entire line. That’s why we use shortwave halogen bulbs. Instead of heating up the air and hoping it eventually reaches your food, these lamps shoot infrared radiation straight into the surface of what you’re cooking. It’s nearly instant. You flip a switch, and you have heat. Just like that.
How it actually works
Inside the bulb, there’s a tungsten filament tucked into a quartz tube filled with halogen gas. Now, normally, tungsten evaporates as it gets hot, which is why old bulbs burn out. But this gas creates a little cycle that puts that tungsten right back onto the filament. Because of that, we can push the heat way higher without the bulb popping. The best part? There’s no “thermal inertia.” You know how a heavy cast-iron element stays hot long after you turn it off? These aren’t like that. They hit peak temperature in a blink and cool down just as fast. It gives you a level of control that’s hard to find with traditional gear.
Getting it installed
Most of these use R7s or SK15 connectors, so they snap right in. We use quartz glass because it doesn’t crack when the temperature swings wildly—which happens a lot in a busy kitchen. Just a heads-up: make sure your wiring can handle the wattage of the tube you’re picking. You don’t want any surprises there. One thing to keep in mind is the light. These lamps arebright. Really bright. It can be a bit blinding for your staff if they’re staring at it all day. We usually suggest using shielded housings or tinted glass. It keeps the heat blasting but saves everyone’s eyes.
The bottom line for your bills
When you stop running ovens for an hour before the rush starts, your energy bill feels it. You only use power when there’s actually food in the chamber. If you’re upgrading an old infrared system, these are usually a simple drop-in replacement. Just double-check your voltage and the length of the tube so it fits perfectly in your reflector.
