
Getting Your 110V IR Heaters to Play Nice with Rotary Oven Controls
When you’re running an automated kitchen line, the biggest headache is usually getting the heat to hit a moving target evenly. That’s why we lean on 110V infrared lamps. They don’t waste time heating up the air around them; they just blast radiant energy straight into the food. It’s fast. Really fast. And that means when your control system calls for a temperature shift, it happens almost instantly. The trick to the temperature We stick with 110V because it just fits better with the standard transformers you’ll find in most commercial kitchen controllers. But the real magic happens when you wire these into a PID loop. Instead of a clunky on/off switch—which usually leads to that annoying “overshoot” where things get too hot—we use Solid State Relays (SSRs) and Pulse Width Modulation (PWM). It basically keeps the temperature in a very tight window. It’s the only way to make sure you aren’t burning the edges of your product while the middle is still raw. Getting the hardware right One size doesn’t fit all here. We build these lamps to match the exact radius of your rotary drum. If the fit is off, you get cold spots, and that’s a nightmare for consistency. We also use quartz envelopes because they can handle the shock of being turned on and off rapidly without cracking. But a word of caution: watch your power draw. If you cram too many high-wattage lamps into one small area, you’re going to stress your power supplies. And please, don’t skimp on the cooling fans. If you don’t pull the heat away from your electronics, your SSRs will just trip on thermal overload and shut everything down. The trade-offs Here’s the thing about IR heating: it’s incredibly quick, but it’s directional. It hits what it sees. If your food has weird shapes or varies in size, you might notice some uneven browning. We usually fix this by tweaking the lamp angle or adding some reflectors to bounce the heat around. You’re trading that “all-around soak” you get from a convection oven for pure, raw speed. For most high-volume lines, that’s a trade worth making.
