
Speeding Up Your Steam Oven with IR
If you’ve ever run a bakery line, you know the frustration. You’ve got everything moving, but the steam oven is the bottleneck. Standard convection just takes too long to get the job done. When you need to push more units per minute, you can’t just wait for the air to heat up. That’s why we use shortwave infrared (IR) emitters. Instead of heating the air and hoping it reaches the bread, IR hits the surface of the product directly. It’s a shortcut. You cut the heating cycle down, which means you can finally crank up that conveyor speed. Power and Heat To actually hit those high production rates, you need a lot of power packed into a small space. We set these emitters up for a rapid ramp-up. By using a high-voltage configuration, we get a massive wattage output without blowing a fuse or overloading your circuit. It creates this intense thermal energy that sears or browns the crust almost instantly. You get the heat exactly where it needs to be. Just a heads-up: these high-wattage tubes get incredibly hot. You’ve got to make sure your housing and cooling fans are up to the task, or you’ll end up warping the oven chassis. Nobody wants that. Why Quartz Matters We go with halogen-filled quartz tubes because they don’t “lag” like metal elements do. They don’t need time to warm up; they hit full temp in seconds. This is the cool part: you can tie the heat intensity directly to your conveyor speed using a PID controller. If the line slows down, the lamps dim. If you speed things up, they blast. And we kept the hardware simple. We use standard R7s or Sk15 connectors. If a tube burns out, you just pop it out and put a new one in. No rewiring the whole rack, no downtime. Just a few minutes and you’re back in business. The Bottom Line for Your Workflow Adding IR changes the whole process. Instead of trying to heat the entire bulk of the product, you’re targeting the surface. You still get that perfect internal moisture from the steam, but the IR lamps handle the finish. It’s a hybrid approach that slashes the time the product spends in the oven. You move more product every hour, but your energy bill doesn’t spike. Why? Because the lamps only kick in when they actually detect a product passing under them. Simple as that.
